Whether you are heading to a Friendsgiving celebration, a holiday party, or hosting your family for the big Thanksgiving get-together, it’s essential to have a good appetizer recipe. This Squash and Apple Galette is my go-to recipe.
Galette is just a fancy name for a free-form pastry. This galette combines a little bit of SWEET with caramelized onions and delicata squash, a little bit of TART with Honeycrisp apples, and a lot of TEXTURE with flaky pie crust, and delicious SAVORY goat cheese. Do your friends and family a favor and make more than 1 of these yummy tarts – after all, there are 2 pie crusts in one box!
Squash and Apple Galette
Ingredients
1/4 cup butter
2 shallots, thinly sliced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 small delicata squash, seeded, ends removed and very thinly sliced
1/2 medium Honeycrisp apple, cored and thinly sliced
1 Pillsbury refrigerated pie crust, softened as directed on box
1/4 cup chèvre (goat) cheese, crumbled
1 egg, beaten
2 teaspoons chopped fresh thyme leaves
Directions
Heat oven to 400°F. Line cookie sheet with cooking parchment paper. In an 8-inch nonstick skillet, cook 1 tablespoon of the butter and the shallots over medium-high heat, stirring occasionally, about 10 minutes or until starting to caramelize. Remove from heat.
In a medium bowl, microwave remaining 3 tablespoons butter uncovered on High about 20 seconds or until melted. Add salt, pepper, squash slices and apple slices. Stir well to combine. Unroll pie crust on parchment paper-lined cookie sheet. Sprinkle cooked shallots over center of crust. Top with squash mixture and cheese, leaving 1-inch border. Brush around outside edge with egg. Fold dough up and over filling in sections, overlapping to create pleats. Brush top of dough with remaining egg. Cover loosely with foil and bake 15 minutes. Remove foil and bake 20 minutes longer until crust is browned. Sprinkle with thyme; cut into wedges to serve.

Tip: I love using delicata squash because you don’t have to peel it! In fact, when you thinly slice the squash and roast it, it develops a delicious, crispy skin. If you have a hard time finding delicata squash, you can substitute another winter squash in this recipe such as butternut or acorn. Simply peel and seed the squash, and slice thinly.
